At nearly fifty acres planted, we farm more Cabernet Sauvignon than any other grape. In 2017 we harvested a little earlier than normal (1-2 weeks) due to September heat, but found the grapes had higher natural tannin and deeper color than we have seen in years. Each block is hand-harvested and most undergo 20-30 day fermentations to build color, phenolics and flavor. We aged the wine nearly 28 months in 43% new French Oak barrels, allowing the tannins to soften and the fruit flavors to marry. This is a classic vintage of Cabernet Sauvignon: dark chocolate and cherry flavors, powdery tannins and juicy acidity.
The majority of grapes for this wine were grown at Bootjack Ranch. Located in the Geneseo district of Paso Robles, the vineyard has two distinct soil profiles: expansive flats of calcareous soils (ancient crustacean remains) and rolling hills of sandy loam. The flat sections have high lime content, while the hillsides are well draining. Warm days and cool nights encourage development of classic, dark cherry flavors to create an elegant and classic expression of Cabernet Sauvignon. IN THE VINEYARD 2017 was a long growing season marked with a couple of heat spikes as we approached harvest season. Luckily the vines at Bootjack Ranch faired very well through the heat and continued into a moderate end to the growing season. The result was long hang-times and wonderfully complex fruit with lower sugar levels. The majority of this wine came from blocks 10 and 2, the two oldest blocks in the vineyard. IN THE WINERY This wine exhibits the benefits of an all estate process as our years of experience with farming Cabernet at Bootjack has allowed us to develop the best fermentation and barreling techniques to highlight the unique characteristics of the site. A portion of the wine went through a stressed, warm maceration period to extract fruit characteristics, while the rest went through extended maceration at lower temperatures to add finesse and elegance. Petit Verdot and Cabernet Franc add length and structure to the finished blend.

Shipping wine around the country is very expensive. We charge about a third less than what it actually costs us. If you need to return your order (or if the wine gets returned back to us because you were unable to receive it after 3 attempts and you didn't email us to make other arrangements), we need to collect a return shipping fee that is up to double the amount of the shipping you paid. Upon receiving the wine back we will refund for the wine minus the initial shipping cost. In the event that we make a mistake we work with you to fix whatever went wrong at no additional cost to you.
